Banana Pancakes

These gluten-free banana pancakes can be ready to serve in 15 minutes! Top with nuts and berries or even a generous serving of ice-cream (you are on holiday after all…)

Ingredients

  • 1 large banana
  • 2 medium eggs, beaten
  • pinch of baking powder
  • splash of vanilla extract
  • 1 tsp oil

Directions

  1. In a bowl, mash 1 large banana with a fork until it resembles a thick purée.
  2. Stir in 2 beaten eggs, a pinch of baking powder and a splash of vanilla extract.
  3. Heat a large non-stick frying pan or pancake pan over a medium heat and brush with ½ tsp oil.
  4. Using half the batter, spoon two pancakes into the pan, cook for 1-2 mins each side, then tip onto a plate. Repeat the process with another ½ tsp oil and the remaining batter.
  5. Top the pancakes with roughly chopped nuts, like pecans, and fresh berries.

Copycat Egg McMuffin Recipe

Ingredients

  • 2 large eggs
  • 2 English muffins
  • 2 slices bacon or ham
  • 2 slices American or Cheddar cheese
  • cooking spray

Instructions

  • Cut the English muffin in half, butter, and toast on a griddle or in the oven for a few minutes.
  • In a flying pan, cook the egg to preference.
    BONUS TIP: To get that round egg shape of a real McDonalds Egg McMuffin, use an empty and cleaned tuna can, spray the inside well with cooking spray, place that on the hot pan and break the egg into the can. Cook until the eggs are cooked to your preference. You can use an egg ring too, that would probably be easier.
  • Heat up the bacon or ham in the skillet.
  • Put a slice of cheese on the bottom half of the English muffin.
  • Place the egg on top of that, then the bacon or ham on top of the egg, and cover with the top of the toasted English muffin.

Breakfast Skillet

Ingredients

  • 200g spicy (or plain) pork sausage
  • 1 medium sweet yellow pepper, chopped
  • 1 medium sweet red pepper, chopped
  • 1 medium onion, chopped
  • 3 medium tomatoes, chopped
  • 2 small baby marrow, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup shredded cheddar cheese

Directions

  1. In a large skillet, cook the pork sausages, peppers and onion over medium heat until sausages are cooked through. Break or slice the sausages into pieces. Stir in tomatoes, baby marrow, garlic and paprika; cook covered for approximately 5-7 minutes or until vegetables are tender.
  2. With back of spoon, make four wells in the vegetable mixture; break an egg into each well. Sprinkle eggs with salt and pepper. Cook, covered for approximately 4-6 minutes or until egg whites are completely set and yolks begin to thicken but are not hard.
  3. Remove from heat; sprinkle with cheese. Let stand, covered for 5 minutes or until the cheese is melted. Serve with a crusty bread.
